This chopped Italian Sub is a delectable combo of protein-rich smoked tofu, veggies, pickles, and hummus, all chopped and tucked in Sub Style Sandwich Buns. Dressed with Italian seasoning, salt and pepper, and red wine vinegar, this quick and easy recipe hardly takes 10 minutes to prepare and a little bit of each ingredient in every bite.

Ingredients
  

  • 6 Leaves Romaine Lettuce
  • ½ Tomato
  • ¼ Small Red Onion
  • 1 Pickle
  • 150 g Smoked Tofu
  • 2 tbsp Kalamata Olives
  • 3 tbsp Hummus
  • ¼ tsp Italian Seasoning
  • 2 tsp Red Wine Vinegar
  • Salt and Pepper to Taste
  • 2 Sub Style Sandwich Buns

Instructions
 

  • Add your veggies and tofu to a chopping board, and with a large knife, chop until everything is the same size and well incorporated.
  • Next, add your hummus, red wine vinegar, and Italian seasoning and season to taste with salt and pepper.
  • Chop again and mix with the knife until everything is well coated with the hummus.
  • Serve on your sandwich bread, and enjoy!
