Chocolate Churro High Protein French Toast Bites

- 4 slices of bread
- ½ scoop vegan chocolate protein powder
- 2 tsp cacao powder
- 3 tbsp coconut yogurt
- 2-3 tbsp water to thin
For the French Toast Batter
Cinnamon Sugar
- 3 tbsp monk fruit sugar
- 1 tbsp cinnamon
First, make the French toast batter. Mix all ingredients in a small bowl and let sit for 5 minutes.
Slice the crust off your bread.
Mix your vegan protein powder, cacao powder, coconut yogurt, and water to thin it in a small bowl. Add water as needed until you reach a spreadable consistency.
Spread your high-protein chocolate sauce over 2 slices of your bread, close, add the other slices on top, and cut your chocolate sandwiches into quarters.
Dink your mini chocolate stuffed bites into the French toast batter, pan-fry in a touch of oil, and cook over medium heat until both sides are golden.
Mix your monk fruit sugar and cinnamon in a small bowl.
Dunk your French toast bites into the cinnamon sugar.
If you’d like, you can make the chocolate sauce dip by mixing cacao powder, maple syrup, and plant milk, but the bites taste delicious on their own!
