Start your pudding by melting your dark chocolate. You can do this is a double boiler or in the microwave. If using the microwave use 30 second increments stirring in between.
Add all of the ingredients into a blender or food processor and blend until smooth.
Once blended pour into ramekins or small bowls that you would like to serve out of.
Store in the fridge for a minimum of 1 hour for the mousse to set and cool.
You can store them in the fridge for up to 5 days. Eat as is or top with some fresh fruit, crushed Oreos, coconut shreds and more!
