This High Protein Vegan Chocolate Pudding will rock your world! It’s sweet, chocolatey and oh so decadent and so mucch better than dairy based alternatives! It only requires 3 ingredients and you will not believe what it is made with… tofu! Yes you heard that right, silken tofu to be exact. Silken tofu is actually used in many different desserts. It’s so versatile, can take on any flavour you give it and is the perfect ingredient to make our chocolatey treat.

What ingredients do I need for High Protein Vegan Chocolate Pudding?

For this recipe you will only need 3 key ingredients

Silken Tofu: This is the base of our dessert. It can be found in most grocery stores next to the extra firm tofu. The difference here is the texture. Silken tofu is very soft and flubbery and can be blended very easily. Make sure to get silken or the texture will be way off! Soft and medium tofu would work here as well.

Dark Chocolate: Make sure to use a high quality dark chocolate here. Since there are only a few ingredients the chocolate flavor really comes through! I like to use Lindt dark chocolate but any dark chocolate will do. Just make sure to check the ingredients to make sure it’s vegan!

Maple Syrup: I like to use 100% maple syrup as I think it has a more robust flavour profile.

Himalayan Salt: The salt is optional although it does bring out the sweetness. I did not count this as an ingredient.

How to make High Protein Vegan Chocolate Pudding

This chocolate pudding is so simple to make and only requires a few simple steps and about 5-10 minutes of prep time.

Melt the chocolate: This is the first step. You can melt your chocolate in a double boiler over the stove or in the microwave. If using the microwave zap for 30 second increments stirring in between.

Blend baby blend: The next step is to add your silken tofu, maple syrup, melted chocolate and salt into a blender or food processor. I always use my Vitamix!

Pour and store: Once everything is blended together pour your pudding into small bowls or ramekins for storage. Place them in the fridge for at least 1 hour to set then store in the fridge for up to 5 days.

This pudding is the best pudding ever because it is so much healthier than any other alternative! This pudding is packed with plant protein, and is gluten free, refined sugar free, dairy free and vegan! It is chocolatey and sweet and is so simple to make! Typical pudding is made with high fat dairy products, so this is the best healthy, guilt free alternative!

How to eat your chocolate pudding

It is best to eat your pudding after it has set for at least 1 hour. Once that time is up feel free to eat as is or jazz it up with some delicious toppings.

  • Add some fresh fruit on top for a fresh kick.
  • Crush some Oreos on top (yes Oreos are vegan!).
  • Shave some more dark chocolate on top or add some chocolate chips.
  • Sprinkle on some coconut shreds or granola!

  • 400 g Silken Tofu

Instructions
 

  • Start your pudding by melting your dark chocolate. You can do this is a double boiler or in the microwave. If using the microwave use 30 second increments stirring in between.
  • Add all of the ingredients into a blender or food processor and blend until smooth.
  • Once blended pour into ramekins or small bowls that you would like to serve out of.
  • Store in the fridge for a minimum of 1 hour for the mousse to set and cool.
  • You can store them in the fridge for up to 5 days. Eat as is or top with some fresh fruit, crushed Oreos, coconut shreds and more!
