These vegan sloppy joes are the perfect quick and easy week night dinner! They are made with lentil and TVP and topped with a delicious simple avocado coleslaw! These sloppy joes are great for the whole family and are the perfect balanced and filling meal!
Start by dicing your onion and pan fry for a few minutes until translucent.
Add in your crushed garlic and sauté for 1 minute to toast, stirring continuously so the garlic does not burn.
Add in the rest of the ingredients and cook for 5-10 minutes on low-medium heat until everything is incorporated and heated through.
Next, make your coleslaw. Add the avocado, maple syrup, lemon juice, water and salt and pepper into a bowl. Mash the avocado and mix until a sauce forms.
Shred your cabbage and carrot and mix it into the dressing.
Serve your sloppy joes on a toasted burger bun with some of that delicious coleslaw and enjoy!
