How to make vegan sloppy joes

You will be eating vegan sloppy joes in under 20 minutes! Here’s how to make them:

Dice up half of an onion and pan fry for a few minutes until translucent. Add in a few cloves of garlic and toast them for one minute, stirring continuously so they do not burn!

Next, add in the rest of the sloppy joe ingredients! Yes, it is that easy! Add the lentils, TVP (or soy granules), tomato sauce and spices on top of the onions and cook until the mixture is heated through.

Time to make your super simple coleslaw! To a bowl add 1 avocado, along with some maple syrup, lemon juice, a splash of water and some salt and pepper to taste. Mash it up until it becomes a dressing-like consistency. Chop up some cabbage and shred some carrots and mix them into the dressing!

At last, it is time to assemble! Toast a whole wheat burger bun then slap on some of that sloppy joes mixture and top with some coleslaw! I like to have some extra coleslaw on the side for that extra bit of crunch and freshness!

Some tips from Steph

Use a whole wheat burger bun! I love using whole wheat burger buns or bread wherever possible! Using whole wheat ensures you are getting enough fiber and it keeps you full for much longer!

Omit the TVP. Make your easy vegan sloppy joes without TVP by adding in another can of lentils. Just be sure to omit the vegetable broth and you may need to remove about a half cup of tomato sauce so the mix is not too runny!

Make it soy free! To make this soy free remove the TVP and use only lentils (directions written in the last sentence). Be sure to remove the soy sauce as well and use salt instead!

Make it gluten free! Make this recipe gluten free by using a gluten free burger bun and swapping the soy sauce for a gluten free soy sauce or tamari.

Spice it up! You can season these vegan lentil sloppy joes any way you’d like! Try adding some BBQ sauce to make BBQ lentil sloppy joes or add in some chili flakes to make some spicy vegan sloppy joes!

Use a pre-shredded coleslaw mix! You can find pre-shredded packages of coleslaw in grocery stores alongside the lettuce. This makes the prep time even shorter!

Use a different bean or legume! If you do not have lentils on hand you can use whatever you have laying around in your pantry! If you make them with a bigger bean like chickpeas smash them slightly to resemble a crumbly texture.

Add in a mock meat! Try making some beyond meat vegan sloppy joes, or use a similar vegan mince to spice up the flavor!

These vegan sloppy joes are the perfect quick and easy week night dinner! They are made with lentil and TVP and topped with a delicious simple avocado coleslaw! These sloppy joes are great for the whole family and are the perfect balanced and filling meal!

Ingredients
  

  • 4 Whole Wheat Hamburger Buns
  • ½ White Onion diced
  • 4 cloves Garlic
  • 1 can Lentils or 1½ cups
  • ¾ cup Dried Textured Vegetable Protein (TVP) or soy granules
  • 400g Passata or Lightly Seasoned Tomato Sauce
  • ¾ cup Veggie Broth
  • 2 tbsp Maple Syrup
  • 2 tsp Liquid Smoke
  • 1 tbsp Soy Sauce
  • 1 tsp Chili Powder
  • 1 tsp Cumin
  • 1 tsp Smoked Paprika
  • 1 tsp Onion Powder
  • Salt & Pepper to Taste

For the Super Simple Coleslaw

  • 1 Avocado
  • 1 tbsp Maple Syrup
  • 1 tbsp Lemon Juice
  • 2-3 tbsp Water
  • Salt & Pepper to Taste
  • Large Purple Cabbage shredded
  • Large Green Cabbage shredded
  • 1 Large Carrot shredded

Instructions
 

  • Start by dicing your onion and pan fry for a few minutes until translucent.
  • Add in your crushed garlic and sauté for 1 minute to toast, stirring continuously so the garlic does not burn.
  • Add in the rest of the ingredients and cook for 5-10 minutes on low-medium heat until everything is incorporated and heated through.
  • Next, make your coleslaw. Add the avocado, maple syrup, lemon juice, water and salt and pepper into a bowl. Mash the avocado and mix until a sauce forms.
  • Shred your cabbage and carrot and mix it into the dressing.
  • Serve your sloppy joes on a toasted burger bun with some of that delicious coleslaw and enjoy!
