Healthy Chocolate Chip Chickpea Cookies
These chocolate chip chickpea cookies are the perfect quick and healthy dessert! We make these cookies at least 2 times a week, and you don't taste the chickpeas at all!

- 1 14oz can Chickpeas
- ½ cup Creamy Peanut Natural Butter
- ⅓ cup Maple Syrup
- 2 tsp Vanilla
- Pinch of Salt omit if your nut butter is pre-salted
- ½ tsp Baking Powder
- ½ tsp Baking Soda
- ¼ cup Vegan Chocolate Chips
First strain and rinse your chickpeas and add them into a high speed blender or food processor with the peanut butter, vanilla, maple syrup and salt.
I use my Vitamix for this recipe and it works perfectly!
Blend until completely smooth! Small pieces are okay but there should be no large pieces of chickpeas left!
Add in the baking soda and baking powder and blend briefly to incorporate into the dough.
If your dough is warm let it cool in the freezer or fridge before mixing in the chocolate chips.
If the dough is warm I transfer it into a small bowl and place it into the freezer for 5 minutes.
Mix in your chocolate chips!
Divide into cookies and bake at 350f for 15-18 minutes!
