How to make your chocolate chip chickpea cookies

This chickpea cookie recipe is our favorite recipe because it is SO easy to make!

First strain and rinse your chickpeas! Add your chickpeas into a high speed blender along with the peanut butter, maple syrup, vanilla and a pinch of salt. Blend until completely smooth! I used my Vitamix for this and it worked perfectly! A food processor would work as well!

Once the mixture is smooth add in your baking powder and baking soda and blend briefly until incorporated.

Let the batter cool if it is too warm. The blending process can heat up the batter and melt the chocolate chips, so make sure the batter is no hotter than room temperature! You can transfer it into a small bowl and place it in the freezer for 5 minutes to cool.

Mix in your chocolate chips! I use the brand enjoy life! Add as many or as little as you’d like!

Divide your cookies onto a baking tray and bake at 350f for 15-18 minutes!

Enjoy your healthy chickpea cookies on their own or with a glass of plant milk!

Can you taste the chickpeas?

Absolutely not! You cannot taste the chickpeas at all! The peanut butter and maple syrup really hide the flavor, they honestly taste just like regular cookies, you will be shocked! Try making them for your family and friends and see if they can guess what they’re made of!

Make it nut free! You can make these vegan chickpea chocolate chip cookies nut free by using a nut free butter such as tahini or sun butter!

Eat the batter raw! I usually eat about half of the batter before baking because it is SO good! Since it has no eggs you can eat it worry free and it won’t hurt your stomach at all!

Make chocolate chickpea cookies! Give your cookies a chocolatey flair by blending in 2 tbsp of cacao powder!

Make sure to let the batter cool before adding in the chocolate chips otherwise they will melt inside of the batter!

Don’t worry if the batter is not completely smooth. A few little pieces is okay, as long as there are not big chunks of chickpeas you’re good to go!

Baking time may vary depending of your oven! Mine took 18 minutes but yours could take as little at 15! Make sure to check them at 15 minutes to make sure they do not burn! They should be nice and golden on the outside!

Use home cooked chickpeas. You can use home cooked chickpeas. Just measure out 1.5 cups and toss them in!

Storing your chocolate chip chickpea cookies

You can store your healthy chickpea cookies for up to 5 days in the fridge! I usually keep them in an air tight container so they do not dry out! They taste great cold out of the fridge, but you can also re-heat them in the microwave or oven before enjoying!

Ingredients
  

  • 1 14oz can Chickpeas
  • ½ cup Creamy Peanut Natural Butter
  • cup Maple Syrup
  • 2 tsp Vanilla
  • Pinch of Salt omit if your nut butter is pre-salted
  • ½ tsp Baking Powder
  • ½ tsp Baking Soda
  • ¼ cup Vegan Chocolate Chips

Instructions

  • If your dough is warm let it cool in the freezer or fridge before mixing in the chocolate chips.
  • If the dough is warm I transfer it into a small bowl and place it into the freezer for 5 minutes.
  • Mix in your chocolate chips!
  • Divide into cookies and bake at 350f for 15-18 minutes!
