Avocado Pesto Pasta

This avocado pesto pasta will be your new fav weeknight dinner! It is rich and creamy and takes less than 20 minutes to make! You will not believe this pesto pasta is dairy free!

Ingredients
  

  • 400 g Whole Wheat Pasta

Sauce

  • 2 Avocados
  • 1/2 cup Walnuts Pine nuts, cashews, or sunflower seeds would also work
  • 1 cup Cannellini Beans
  • 1 Large bunch of basil
  • cup Nutritional Yeast
  • Juice of 1-2 lemons to taste
  • 1 tbsp Onion Powder
  • 1 Clove of garlic
  • 1/2 cup Plant Milk I used cashew, any milk will work. Add more as needed to thin.
  • ¾ tsp Salt
  • ½ tsp Pepper

Instructions
 

  • Add all the ingredients into a high speed blender. I used my vitamix, but a food processor would work as well!
  • Once the sauce is smooth and creamy pour it over your cooked pasta!
  • Top with some extra basil, cherry tomatoes, or a vegan parmesan cheese!
