For the Crust

For the Cheesecake Filling

  • 1.5 cups coconut yogurt
  • 1 tsp vanilla
  • 1 scoop of vegan vanilla protein powder
  • Squeeze of lemon juice

For topping

  • 3 tbsp date syrup
  • 1 tbsp chocolate shavings
  • 1 pecan per jar

Instructions
 

  • First, make your chocolate pecan crust. Add pecans, cacao powder, maple syrup, and salt to a small blender and pulse until a crumbly mixture forms.
  • Divide your crust into 3 jars and pack it down to the bottom.
  • Next, make your cheesecake filling by mixing your yogurt, vanilla, protein powder, and lemon juice in a small bowl.
  • Divide your cheesecake mix into your jars.
  • Drizzle 1 tbsp date syrup per jar, add a pecan on top, and top with chocolate shavings.
