Creamy Cauliflower Alfredo (Vegan, DF)

This cauliflower alfredo is creamy, garlicy and everything you love about alfredo! It can be made in under 20 minutes and is a pasta your whole family is sure to love!

Ingredients
  

  • 300 g Whole Wheat Pasta
  • 5 cups Cauliflower
  • 6 cloves Garlic
  • 1 cup Plant Milk
  • 1/3 cup Nutritional Yeast
  • Juice of half a lemon
  • 3/4 tsp Salt
  • 1/2 tsp Pepper
  • 1/2 cup Raw Cashews
  • 1.5 cups Frozen Green Peas (optional add in)

Instructions
 

  • Start by steaming or boiling your cauliflower until soft and fork tender.
  • Sauté your onions & garlic in olive oil for 5 minutes.
  • Add the onions and garlic into the blender with the rest of the ingredients for the sauce (everything but the green peas). Blend until smooth and creamy!
  • Add in your frozen green peas into the pasta waster 2 minutes before the pasta is cooked. Drain the pasta and peas together then add back in the pot and pour your sauce all over!
