These crispy tacos are the ultimate meal to make on your next taco night! The filling combines plant-based beef burgers infused with aromatic spices for a rich and hearty flavour along with some ooey gooey vegan cheese! The tacos are baked to golden perfection and finished off with a light and refreshing Pico and crispy shredded lettuce. First, pan-fry your chopped onion until translucent, then add your garlic, spices, and tomato paste.
Add your plant-based burgers and crumble them up into the pan. Mix to combine and pan-fry until browned.
Spread out your mini tortillas and add some vegan cheese to half of each tortilla. Add your seasoned beef, fold the tortillas in half, and press them down to close.
Place the folded tortillas on a lined baking sheet and spray with olive oil.
Bake at 400f for 20-25 minutes or until golden and crispy
Meanwhile, make your avocado crema by blending all of the ingredients. Season to taste and add plant milk as needed to thin.
Once your tacos are cooked, open them up and add in some shredded lettuce and pico de gallo. Dip away and enjoy!
