By combining mouthwatering marinated tofu, vegan cheese, and English muffins, you're in for a treat. Even better, they make the perfect meal prep.

  • Make your tofu marinade by adding the soy sauce, maple syrup, olive oil, liquid smoke, and spices to a large bowl or container. Mix to combine.
  • Press the tofu, slice it into strips, and toss in the marinade. Let marinate for at least 5 minutes, but the longer, the better.
  • Preheat the oven to 400 degrees F. Place the tofu on a baking tray and bake for 30 minutes, flipping halfway through.
  • Assemble your breakfast sandwiches by dividing your tofu across five English muffins and adding a slice of vegan cheese. Wrap in foil or parchment paper and store in the fridge or freezer until you're ready to enjoy.
