Hearty Tomato and Lentil Soup

This tomato and lentil soup the the perfect homey meal! It it loaded with veggies, made with simple ingredients and is made in one pot for easy clean up! This soup is perfect if you are feeling under the weather or if you are looking for a light and nutritious dinner.

Ingredients
  

  • 1 Large Onion roughly chopped
  • 3 stalks Celery roughly chopped
  • 2 Carrots roughly chopped
  • 6 cloves Garlic
  • 1 cup Chopped Tomatoes
  • 14 cups Low Sodium Veggie Broth
  • cups Tomato Sauce
  • cup Tomato Paste
  • 1 cup Green Lentils or red
  • 1 cup Chopped Potato one large potato
  • 1 head Broccoli cut into bite sized pieces
  • Salt & Pepper to taste

Instructions
 

  • Sauté your carrots, onion, and celery over medium heat for 5 minutes until translucent.
  • Add in the chopped tomatoes and cook for 2-3 more minutes.
  • Add in your crushed garlic and toast for one minute stirring continuously so the garlic does not burn.
  • Add in the rest of the ingredients (except for the broccoli) and mix well to combine.
  • Bring your soup to a simmer and cook for 30-40 minutes until the lentils are cooked.
  • Green lentils take longer to cook than red lentils, just give them a taste to see if they are cooked. You'll know they are done when the lentils are soft.
  • Add in the chopped broccoli and cook for 2-3 minutes.
  • Season with salt and pepper to taste and enjoy!
