Ingredients
  

  • 5 cups roasted pistachios
  • 2 tbsp olive oil
  • 3 tbsp coconut sugar

Instructions
 

  • If your pistachios are raw, roast them at 350°F for 8-10 minutes, watching carefully so they don’t burn.
  • Add your pistachios to a high-speed blender or food processor (I prefer a food processor) and blend until they become smooth and creamy, about 15 minutes. Be patient this takes time!
  • Add olive oil to help make your pistachios butter creamy, and coconut sugar for sweetness.
  • Serve on toast, in smoothies, on top of your overnight oats, and more!
