You won’t believe you can turn the humble potato into a smashed potato pizza crust! Yes, that’s right! All you need is a russet potato, some olive oil and salt, and your favourite pizza toppings. This pizza is healthy enough that you can eat it every day for dinner, a crowd pleaser, and great for the whole family to enjoy!
Start by cooking your potato. I like to cook it in the microwave for convenience, but you can also bake your potato.
If using the microwave, stab your potato with a fork all over about 20 times, then place it on a plate and pop it in the microwave for 8 minutes, flipping halfway through.
You’ll know it is completely cooked when you can stab it all the way through with a fork.
Heat your olive oil in a pan, then place your potato in the middle.
Place a piece of parchment on top, then use a large plate to press the potato down to make a pizza crust. Use a spatula to smooth out the edges.
Cook your potato over low-medium heat until the bottom is golden, about 8 minutes.
Flip the potato crust upside down onto a parchment-lined baking tray.
Add your favorite toppings, and then bake your potato pizza at 400F for 15-20 minutes or until the bottom is crispy and the cheese is melted.
