Slice your potatoes and carrot into small pieces, then add then to the boiling water and cook until soft, about 10-15 minutes.
While the carrot and potatoes are cooking add the rest of the ingredients into a high speed blender.
Once the carrot and potatoes are soft and fork tender, add them to the high speed blender with the rest of the ingredients and blend everything up until smooth.
