Vegan Tzatziki made with Tofu
This vegan tzatziki is zesty, tangy and adds the perfect freshness to any dish! Use this high protein tzatziki on your vegan wraps, buddah bowls, alongside curries and more!

250 g Silken Tofu ½ Large Cucumber 1-2 cloves Garlic grated 1½ tbsp Lemon Juice 1½ tbsp Apple Cider Vinegar 2 tbsp Olive Oil 2 tsp Dried Dill 1 tsp Onion Powder ½ tsp Salt ¼ tsp Pepper
Add all ingredients into a blender except for the cucumber and blend until smooth. Transfer to a bowl.
Grate your cucumber onto a kitchen towel.
Squeeze the liquid out with your hands then mix the cucumber into the bowl with the rest of the ingredients.
Serve with pita, chips or veggies or use in your burritos or nourish bowls!
