Vegan Tzatziki made with Tofu

Ingredients
  

  • 250 g Silken Tofu
  • ½ Large Cucumber
  • 1-2 cloves Garlic grated
  • tbsp Lemon Juice
  • tbsp Apple Cider Vinegar
  • 2 tbsp Olive Oil
  • 2 tsp Dried Dill
  • 1 tsp Onion Powder
  • ½ tsp Salt
  • ¼ tsp Pepper

Instructions
 

  • Add all ingredients into a blender except for the cucumber and blend until smooth. Transfer to a bowl.
  • Grate your cucumber onto a kitchen towel.
  • Squeeze the liquid out with your hands then mix the cucumber into the bowl with the rest of the ingredients.
  • Serve with pita, chips or veggies or use in your burritos or nourish bowls!
