Ingredients

Dot Cake

  • 4 tbsp all purpose flour or whole wheat flour (mine was a 40/60 blend)
  • 2 tbsp Vedge vanilla ice cream protein powder
  • 2 tsp coconut sugar
  • ¼ tsp baking powder
  • 2 tsp melted coconut oil
  • cup soy milk
  • ¼ tsp vanilla

High protein Icing

  • 1/4 cup coconut yogurt
  • 2 tbsp protein powder
  • 1 tbsp dot sprinkles

Instructions

  • Add flour, vanilla protein powder, coconut sugar, and baking powder to a small ramekin or oven-safe dish. Stir everything together thoroughly so the dry ingredients are evenly distributed and no clumps of protein powder hide in the mixture.
  • Pour in the melted coconut oil, soy milk, and vanilla extract directly into the ramekin with the dry ingredients. Mix everything together until a smooth batter forms. Scrape the bottom and sides to ensure no dry pockets remain, but avoid overmixing to keep the cake light and tender.
  • To cook the cake, you can choose between two cooking methods:
  • Microwave the ramekin for 2–3 minutes until the cake is fully set.
  • For the best bakery-style texture, bake it in a preheated oven at 350°F (175°C) for 15–20 minutes, which creates a softer, fluffier crumb.
  • While the cake cools, make the frosting by mixing the coconut yogurt and protein powder in a small bowl. Stir until smooth and creamy. If the icing feels too thin, gradually add a little more protein powder until you reach a thick, spreadable consistency.
  • Allow the cake to cool for a few minutes before adding the icing. Once slightly cooled, spread the protein frosting evenly over the top, covering the entire surface right to the edges of the ramekin.
  • Pour the dot sprinkles onto a small plate. Carefully flip or press the frosted top of the cake into the sprinkles, coating the entire surface evenly. Once fully covered, lift it up and reveal your colorful, bakery-worthy Viral Dot Cake ready to enjoy.
