Stuffed with briny Kalamata olives, sweet burst cherry tomatoes, wilted spinach, and tangy vegan feta, every bite delivers serious Mediterranean flavor. Heat the olive oil in an 8- to 10-inch non-stick skillet over medium-low heat.
Thinly slice the potato into ribbons using a vegetable peeler or mandolin. Arrange the slices in two overlapping, even layers across the bottom of the pan and season lightly with salt and black pepper.
Cover the skillet with a lid and cook over low-medium heat for 7–8 minutes.
