Vegan Blueberry Oat Bars {gluten free}

These gooey blueberry oat bars are perfect for a breakfast or snack meal prep! They are sweet and gooey with a hint of lemon with a filling oat crumble base. These bars are also vegan, gluten free, dairy free and refined sugar free!

  • Make your crust my mixing all of the ingredients together in a large bowl.
  • Place 3/4 of the crust mixture into a lined or greased 8x8 baking tray then push down with the back of a spatula.
  • Make the blueberry filling by adding all of the ingredients into a small pot and cook over medium heat for 5-10 minutes. Mash some of the blueberries with the back of a spoon or fork.
  • The mixture should have thickened slightly but still be a bit runny. It will continue to thicken while cooking.
  • Pour the blueberry mix on top of the 8x8 pan then crumble on the rest of the crust.
  • Bake at 350f for 35 minutes then let cool in the pan for 10 minutes.
  • Transfer to the fridge to cool completely. These are best eaten cold!
