These gooey blueberry oat bars are perfect for a breakfast or snack meal prep! They are sweet and gooey with a hint of lemon with a filling oat crumble base. These bars are also vegan, gluten free, dairy free and refined sugar free!
Make your crust my mixing all of the ingredients together in a large bowl.
Place 3/4 of the crust mixture into a lined or greased 8x8 baking tray then push down with the back of a spatula.
Make the blueberry filling by adding all of the ingredients into a small pot and cook over medium heat for 5-10 minutes. Mash some of the blueberries with the back of a spoon or fork.
The mixture should have thickened slightly but still be a bit runny. It will continue to thicken while cooking.
Pour the blueberry mix on top of the 8x8 pan then crumble on the rest of the crust.
Bake at 350f for 35 minutes then let cool in the pan for 10 minutes.
Transfer to the fridge to cool completely. These are best eaten cold!
