Vegan Blueberry Oat Bars {gluten free}
These vegan blueberry oat bars are the perfect breakfast or snack meal prep! They are made with wholesome ingredients and are gluten free, refined sugar free and dairy free! They have an ooey gooey blueberry filling with hints of lemon and crumbly oat base! You will never have to buy store bought granola bars again after making these!
How to make blueberry oat bars
Make your crust by mixing together the ingredients in a large bowl. Once everything comes together add three quarters of the mixture into an 8×8 greased or lined baking dish and pat down with the back of a spatula.
Make the filling. This blueberry jam filling is so healthy and easy to make! Just add your blueberries, chia seeds, maple syrup, lemon juice and lemon zest into a small pot and cook for 5-10 minutes over medium heat. Mash the blueberries slightly and the chia seeds will absorb the liquid and make a jam-like texture.
Assemble. Pour the blueberry chia jam over the 8×8 pan then crumble on the remaining quarter of the crust mixture over the blueberry layer. Push the crumble down into the blueberries then bake at 350f for 35 minutes!
Let the bars cool in the pan for at least 10 minutes after taking them out of the oven. Then let them cool completely in the fridge. This will allow the chia seeds to absorb all of the moisture from the blueberries.

These blueberry oat bars are a much healthier alternative to store bought bars! They are packed with whole grains, fiber, antioxidants and they have no additives or excess amounts of sugar! I love making granola bars at home because you know exactly what goes in them! These bars are filled with mostly whole foods and minimally processed ingredients!
Storing your blueberry bars
Store your blueberry oat bars in the fridge in an air tight container for up to 4 days!
Some tips from Steph
Use frozen blueberries if blueberries are not in season where you live! It can also much cheaper!
Sub chia seeds for a cornstarch slurry if you do not have chia seeds.
Sub apple sauce for one mashed banana.
Let the bars cool! Let the bars cool before enjoying! If you take them out too early they may crumble apart!
Eat them cold! These blueberry bars taste best after they have chilled in the fridge!
Sub the maple syrup for any other liquid sweetener you’d like! Agave works great as well!

Ingredients
For the Crust
- 1½ cups Oats
- 2 cups Oat Flour
- ⅓ cup Maple Syrup
- ½ cup Apple Sauce or 1 mashed banana
- 1 tsp Vanilla
- ¼ tsp Salt
For the Blueberry Filling
- 2½ cups Blueberries fresh or frozen
- 3 tbsp Maple Syrup
- Zest of 1 Lemon
- Juice of 1 Lemon
- 3 tbsp Chia Seeds
Instructions
- Make your crust my mixing all of the ingredients together in a large bowl.
- Place 3/4 of the crust mixture into a lined or greased 8×8 baking tray then push down with the back of a spatula.
- Make the blueberry filling by adding all of the ingredients into a small pot and cook over medium heat for 5-10 minutes. Mash some of the blueberries with the back of a spoon or fork.
- The mixture should have thickened slightly but still be a bit runny. It will continue to thicken while cooking.
- Pour the blueberry mix on top of the 8×8 pan then crumble on the rest of the crust.
- Bake at 350f for 35 minutes then let cool in the pan for 10 minutes.
- Transfer to the fridge to cool completely. These are best eaten cold!
