Cranberry Orange Vegan Breakfast Cookies {gluten free}

These cranberry orange breakfast cookies are the ultimate breakfast meal prep! They are made with 100% whole foods and naturally sweetened with dates! These cookies are sweet and nutty with fall flavors! They are simple to make and will keep you feeling full for hours!

Ingredients
  

  • cup Rolled Oats
  • 1 cup Oat Flour
  • Zest of one Large Orange
  • ½ tsp Nutmeg
  • ½ cup Almond Butter or other nut or seed butter
  • 6 Large Medjool Dates make sur they are nice and gooey!
  • ½ cup Plant Milk
  • 2 tsp Vanilla
  • cup Fresh Orange Juice about the juice from 1 large orange
  • cup Dried Cranberries
  • cup Chopped Pecans

Instructions
 

  • Grab a large bowl and add in the rolled oats, oat flour, orange zest, and nutmeg. Mix to combine.
  • In a small blender add your wet ingredients and the medjool dates. Blend until completely smooth.
  • Mix the wet with the dry along with the chopped pecans and dried cranberries.
  • Divide into 8-10 cookies and bake at 350f for 15-20 minutes until golden!
