How to make cranberry orange vegan breakfast cookies

These healthy breakfast cookies are so simple to make and take only a few steps!

Add your dry ingredients into a large bowl. Add in your oats, oat flour, orange zest and nutmeg into a bowl and mix to combine.

Blend your wet ingredients. Add all of the wet ingredients into a blender along with the medjool dates. This will give our cookies the sweetness! Blend until completely smooth.

Mix the wet and dry. Add your blended wet ingredients on top of the dry ingredients and mix well until everything is combined. Add in the chopped pecans and dried cranberries and mix again.

Divide your batter into cookies. This recipe should make 8-10 large breakfast cookies. Place onto a greased or lined baking tray and bake for 15-20 minutes at 350f until golden.

These vegan oatmeal breakfast cookies are the perfect healthy breakfast or snack option! They are made with 100% whole foods and are sweetened with dates, with no added sugar! These breakfast cookies are loaded with whole grains and fiber from the oats and healthy fats from the nut butter and pecans! This is a much healthier alternative to cookies filled with refined grains and sugars and will keep you feeling full for hours!

Some tips from Steph

Make it nut free! To make this breakfast cookie recipe nut free swap the almond butter for tahini, sun butter, or another nut free alternative! You can swap the pecans for sunflower seeds or omit!

Use a different nut butter! If you don’t have almond butter you can use any nut butter to make this breakfast cookie recipe! Peanut butter, cashew butter and walnut butter will all work here!

Make them without dates. If you cannot find dates where you live you can swap them with 2 large bananas and it should work just fine. I have not tried it myself yet but if you try let me know so I can adjust the blog post!

Use any plant milk! I used almond milk here but any plant milk will work such as soy, oat, or coconut!

Make your own oat flour! No need to buy oat flour at the store! You can make some easily by blending up some rolled oats in your blender until completely smooth! I usually make a big batch and and store it in my pantry so I always have it on hand!

Make sure your dates are nice and fresh! Your dates should be gooey and caramelly! If they are too dry soak them in hot water for 20 minutes to soften them!

Storing your vegan breakfast cookies

Store your healthy breakfast cookies in the fridge in an airtight container for up to 5 days! You can take them with you on the go and eat them cold or at room temperature! They taste just as good on day 5 as they do on day 1!

Ingredients
  

  • cup Rolled Oats
  • 1 cup Oat Flour
  • Zest of one Large Orange
  • ½ tsp Nutmeg
  • ½ cup Almond Butter or other nut or seed butter
  • 6 Large Medjool Dates make sur they are nice and gooey!
  • ½ cup Plant Milk
  • 2 tsp Vanilla
  • cup Fresh Orange Juice about the juice from 1 large orange
  • cup Dried Cranberries
  • cup Chopped Pecans

Instructions
