Vegan Gluten Free Gingerbread Cookies
These vegan gingerbread cookies are light and pillowey and filled with holidays flavor! They are made with 9 simple ingredients and made in one bowl for easy clean up! These festive cookies are sure to be a fan favorite!

- 1¼ cup Almond Flour
- 1 cup Oat Flour
- 1½ tsp Ginger
- 1 tsp Cinnamon
- ¼ tsp Cloves
- 1 tsp Baking Soda
- ⅓ cup Blackstrap Molasses
- ⅓ cup Unsweetened Applesauce
- White sugar for rolling
Add your dry ingredients into a large bowl and mix well until combined.
Add your wet ingredients on top and mix with a spoon until the dough comes together.
Divide your dough into cookies - I made 8 large cookies but you can make however many you'd like. Just remember the baking time may vary with different sized cookies.
Roll your cookies in some sugar then place them onto a lined baking tray.
Bake for 10 minutes at 350f then take them out and enjoy!
