I am NOT JOKING when I say that these may be my favorite cookie recipe to date! If you love Christmas cookies then this recipe is for you! They are completely guilt free and made with wholesome ingredients without any refined grains!

My boyfriend and I literally ate the whole batch in one sitting and felt fine afterwards, no groggy post-dessert slump or stomach ache! It is one of the things I love most about making healthy desserts like this one!

How to make these vegan gingerbread cookies

These gluten free dairy free gingerbread cookies are made completely in one bowl for easy clean up! They require less than 10 minutes of prep time and only 10 minutes to bake! You’ll be eating in NO TIME!

First add your dry ingredients into a large bowl. Start with the almond flour, oat flour, spices and baking soda and whisk until combined.

Next, add your wet ingredients on top. No need to use a separate bowl, just add them right on top of the dry ingredients.

Mix to combine. Mix well until the wet and dry are fully incorporated!

Divide your batter into cookies – I made 8 large cookies, but you can make them any size you’d like! Just keep in mind the cooking time may vary for different sized cookies.

OPTIONAL – Roll your cookies in some sugar! I have made these gingerbread cookies with and without the sugar and they both taste amazing. I will say if you enjoy a sweeter cookie definitely opt to roll them in some sugar!

Bake your cookies for 10 minutes in the oven at 350f. No need to flatten your cookies. They will be crinkled at the top once they are done!

What makes these healthier?

These healthy vegan gingerbread cookies are the best healthier cookie alternative! They are made with minimal sugar and have no refined grains! These cookies have a base of oat flour instead of white flour and are made with almond flour, which replaces the need for high fat dairy products such as butter, or oil! They are packed with fiber to keep you full for longer and healthy fats from the almonds!

My boyfriend and I once ate a whole batch in one sitting and honestly we felt fine after! No grogginess, upset tummies or discomfort at all! You can 100% tell the difference between sweets made with refined sugars and grains compared to ones made with mostly whole foods!

Some tips from Steph

Make sure to use superfine blanched almond flour. It has a very different consistency and will yield different results if using a different type!

Don’t flatten your cookies before baking. The thing I love about these vegan gingerbread cookies the most is their light pollowey texture! If you flatten the cookies they will not have the same texture and will be more dense.

Make them nut free! Although I have not tried it myself you could try swapping the almond flour for equal parts oat flour to make these cookies nut free! Let me know if you try this so I can update the suggestion for future readers!

Make them with less sugar. To make these cookies with less sugar ensure you are using an unsweetened applesauce and bake them without rolling them in sugar.

Don’t have oat flour? Make your own at home! Just blend some rolled oats in a high speed blender until they reach a fine powder. I like to make a big batch and keep it in the pantry so I always have some on hand!
