Fluffy Lemon Protein Pancakes

These lemon protein pancakes are fluffy on the inside and have a perfectly golden exterior! They are packed with nearly 50g of plant based protein and will be the best protein pancakes you have ever tried! These pancakes are unlike many other protein pancakes because they are ultra fluffy and not gummy at all! They are sweet and tart and have become the new #1 pancake in our household!

Ingredients
  

Wet Ingredients

  • cups Plant Milk
  • cup Apple Sauce
  • 1 tsp Vanilla
  • 1 tbsp Maple Syrup
  • Zest & Juice of 1-2 Lemons I used 2 because I like mine reeeally lemony!

Dry Ingredients

Instructions
 

  • First mix your dry ingredients into a large bowl and your wet ingredients in another.
  • Combine the wet and dry and mix well.
  • Pan fry your pancakes over medium heat for a few minutes on each side until they are nice and golden.
  • Top with some vegan yogurt, blueberries, lemon zest and more!
