Fluffy Lemon Protein Pancakes
These lemon protein pancakes are fluffy on the inside and have a perfectly golden exterior! They are packed with nearly 50g of plant based protein and will be the best protein pancakes you have ever tried! These pancakes are unlike many other protein pancakes because they have a light and fluffy texture and are not gummy at all! They are sweet and tart and have become the new #1 pancake in our household!

How to make you lemon protein pancakes
These lemon vanilla protein pancakes are so simple to make, you’ll be eating in less than 20 minutes!
First mix your dry ingredients into a large bowl.
In a separate bowl mix together your wet ingredients. Mixing the wet and dry separately will ensure that the batter comes out nice and smooth!
Combine the wet and the dry, then you’re ready to start cooking!
Cook your pancakes over medium heat for a couple minutes on each side. They should be nice and golden on the outside! Make sure to use a non stick pan! If you do not have a non-stick pan just use a touch of olive oil so the pancakes do not stick!

Make it sugar free! You can make this recipe sugar free by omitting the maple syrup. The sweetness from the protein powder should sweeten them enough!
Add some toppings! I topped my lemon protein powder pancakes with some coconut yogurt, lemon zest and blueberries but you can use any toppings you’d like! Try some nuts, fresh fruit, coconut and more!
Use a different flour! Gluten free or spelt flour is best here although you could substitute it with white flour. Oat flour may work as well but you would likely need to add more liquid and the consistency would likely be more dense.
Sub the apple sauce for 1 mashed banana or some vegan yogurt.
Make sure the pancakes have cooked for a few minutes before flipping. If you flip them too soon they will break apart while flipping!
Can you make your protein pancakes without protein powder? Unfortunately no you need the protein powder for this recipe! It adds the sweetness and the protein and cannot be subbed!

Fluffy Lemon Protein Pancakes
Ingredients
Wet Ingredients
- 1½ cups Plant Milk
- ⅓ cup Apple Sauce
- 1 tsp Vanilla
- 1 tbsp Maple Syrup
- Zest & Juice of 1-2 Lemons I used 2 because I like mine reeeally lemony!
Dry Ingredients
- 1 cup Gluten Free Flour
- 50 g Vegan Vanilla Protein Powder
- ½ tsp Baking Soda
- 2 tsp Baking Powder
- 1½ tbsp Poppy Seeds
Instructions
- First mix your dry ingredients into a large bowl and your wet ingredients in another.
- Combine the wet and dry and mix well.
- Pan fry your pancakes over medium heat for a few minutes on each side until they are nice and golden.
- Top with some vegan yogurt, blueberries, lemon zest and more!
