Snickers Baked Oatmeal with Peanut Butter Protein Icing

This snickers baked oatmeal will be your new favorite breakfast meal prep! It takes less than 10 minutes of prep time and literally tastes like cake! This baked oatmeal is sweet, nutty, caramelly and packed with plant based protein! It is topped with a high protein peanut butter icing you'll literally want to put on everything! It is also low in fat and loaded with fiber!

For the Peanut Butter Protein Icing

  • Grab a large baking dish and gather your ingredients. My dish was a 7x10 inch dish but an 8x8 dish will work as well!
  • Add all of the ingredients into your baking dish a mix well to combine.
  • Bake your oatmeal at 350f for 30 minutes.
  • In the meantime make your peanut butter protein icing.
  • Add all of the ingredients into a blender and blend until completely smooth. Add plant milk as needed to thin. If the consistency is too watery add more powdered peanut butter and vegan protein as needed. It will be different for everyone depending on the brand of protein and yogurt being used.
  • Once the oats have baked take them out and spread on the peanut butter icing. It is best to let the oatmeal cool for 10-15 minutes although this is not necessary.
  • Top with some shaved chocolate and chopped peanuts and enjoy!
