Press your Tofu to release the liquid, then chop it into slices.
Add your buffalo sauce into one bowl and add the nutritional yeast and cornstarch to another.
Dunk tofu slices in buffalo sauce, then dredge them into the nutritional yeast/cornstarch mixture.
Pan fry on both sides for 2-3 minutes until crispy.
Make your tahini ranch by mixing everything in a small bowl. Add salt and pepper to taste. Add 1-2 tbsp of water to thin to get to your desired consistency if needed.
Assemble your tortilla and roll it up. Pan fry on medium heat until golden and crispy, starting with the flap of the tortilla first so it seals shut.
