Ingredients
  

For Butterbean beet dip

  • 1.5 cups butterbeans - also called lima beans
  • 2 medium cooked beets
  • 3 tbsp tahini
  • 2 tbsp olive oil
  • Juice of 1-1.5 lemons
  • 1 clove garlic
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • ½ - ¾ tsp salt to taste
  • 2 ice cubes

For Pita chips

  • 4 mini pita breads
  • 1 tsp olive oil
  • Pinch of salt

Optional toppings

  • Fresh herbs such as parsley, dill, or chives
  • Sesame Seeds
  • Extra Butterbeans
  • Drizzle of Olive oil

Instructions
 

  • Add all ingredients into a blender and blend until smooth.
  • Season to taste with salt.
  • To make your pita chips, slice your pita bread into triangles, then toss in olive oil and salt. Air fry at 350f for 6 minutes or until golden, or bake at 400f for 10 minutes.
  • Garnish with lima beans, chopped dill, and a drizzle of olive oil.
  • Serve with baked pita chips. Dip away and enjoy!
