Plus, the homemade hemp seed Caesar dressing is creamy, tangy, and loaded with flavor without relying on dairy or eggs.
This recipe is perfect for serving 4 or meal prepping for the week ahead.
Start by making your hemp seed Caesar dressing: blend all the dressing ingredients until smooth, then season to taste.
For the cashew parmesan, add the ingredients to a small blender or food processor and pulse until crumbly. Be careful not to over blend, or it will turn into cashew butter.
Wash and roughly chop your romaine lettuce. If meal-prepping, store any extra in a container or a zip-top bag lined with a paper towel to keep it fresh.
When you’re ready to eat, pan-fry 100g of vegan chicken per serving and warm your naan until soft.
Toss the romaine with hemp seed Caesar dressing, then layer onto the naan with the vegan chicken and finish with 2 tbsp of cashew parm on top.
