  • For the cashew parmesan, add the ingredients to a small blender or food processor and pulse until crumbly. Be careful not to over blend, or it will turn into cashew butter.
  • Wash and roughly chop your romaine lettuce. If meal-prepping, store any extra in a container or a zip-top bag lined with a paper towel to keep it fresh.
  • When you’re ready to eat, pan-fry 100g of vegan chicken per serving and warm your naan until soft.
  • Toss the romaine with hemp seed Caesar dressing, then layer onto the naan with the vegan chicken and finish with 2 tbsp of cashew parm on top.
