Ingredients

For the Chickpea Fries

  • 2 cups chickpea flour
  • 4 cups water
  • 1 tbsp olive oil
  • 1 tsp salt
  • ¾ tsp black pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder

For the Coconut Dill Dip

  • 1 cup coconut yogurt
  • 1/8 tsp garlic powder
  • 1 tsp onion powder
  • 1 Lemon juice
  • 3 tbsp fresh dill chopped
  • salt and pepper to taste

Instructions

  • Mix all ingredients in a pot and cook over medium heat for 5 minutes until it has become super thick!
  • Flatten your mix onto a lined baking sheet as evenly as possible and pop it in the fridge for 15 minutes to firm up.
  • Place your chickpea dough onto a large baking tray. Slice it into fry shapes or any shape you choose and return to the baking sheet. Make sure to keep spaces between the fries so they can crisp up.
  • Bake at 400f for 25-30 min flipping halfway through, and serve with your favorite dip!
  • I used a COCONUT DILL DIP - mix coconut yogurt, garlic powder, onion powder, lemon juice, salt, freshly chopped dill, salt & pepper. Or you can use my homemade high-protein vegan tzatziki or cashew sriracha mayo - recipes linked above in blog post!
