Ingredients
  

  • 2 cans Mixed Beans my cans had red kidney beans, whit beans & chickpeas
  • ¾ cup Cherry Tomatoes halved
  • ½ Cucumber
  • ¼ cup Red Onion diced
  • 1 Bell Pepper
  • ½ bunch Parsley roughly chopped
  • 2 tbsp Olive Oil
  • ¼ cup Apple Cider Vinegar or red wine vinegar
  • 2 tsp Oregano
  • 1 tsp Garlic Powder
  • Salt & Pepper

Instructions
 

  • Strain and rinse your canned beans then add them to a large bowl.
  • Chop up your veg then add to the bowl.
  • Drizzle on your olive oil, vinegar and spices and mix well until combined.
