2 cans Mixed Beans my cans had red kidney beans, whit beans & chickpeas ¾ cup Cherry Tomatoes halved ½ Cucumber ¼ cup Red Onion diced 1 Bell Pepper ½ bunch Parsley roughly chopped 2 tbsp Olive Oil ¼ cup Apple Cider Vinegar or red wine vinegar 2 tsp Oregano 1 tsp Garlic Powder Salt & Pepper
Strain and rinse your canned beans then add them to a large bowl.
Chop up your veg then add to the bowl.
Drizzle on your olive oil, vinegar and spices and mix well until combined.
