Crispy Oven Baked Sweet Potato Chips

These crispy sweet potato chips are just as good as store bought! They require only 4 ingredients and can be eaten as a healthy snack all week long. Use these for your Buddha bowls, to add to sandwiches, or dip into a vegan aioli!

Ingredients
  

  • 2 Medium Sweet Potatoes
  • 3 tbsp Olive Oil
  • Salt & Pepper

  • First slice up your sweet potatoes. This step is crucial to ensure all the chips come out evenly crunchy. If possible use a mandolin to slice them so they come out the exact same width. If you do not have a mandolin you can use a peeler or slice with a knife as thin as possible.
  • I used a knife to slice my potatoes and the thicker ones slices did not come out as crunchy. Make sure to slice as thin as possible and keep in mind when cooking that if they are different thicknesses they will finish at different times, so be sure to watch them closely near the end and remove the ones that are done.
  • After slicing your potatoes add them into a large bowl and season with olive oil, salt and pepper. Toss with your hands to ensure all the potatoes are well coated.
  • Spread onto a baking tray so that the slices are not overlapping. This will ensure they come out super crunchy.
  • Bake at 400f for about 30 minutes flipping halfway through. Make sure to watch them closely at the end so they don't burn and remove the thinner chips that cook faster than the rest.
