Add all your dough ingredients into a small bowl and mix with a spoon until combined. Do not use your hands, as the dough is quite sticky. It may look like it will not come together, but keep mixing it, and it will!
Once the dough is incorporated and rolled into a ball, place it on a very well-floured surface. Add lots of flour to the top of the dough.
Roll out the dough into a large rectangle, adding more flour as needed to prevent sticking.
Add your melted vegan butter on top and sprinkle on your coconut sugar and cinnamon.
Slice the dough in half lengthwise, then roll each half.
Place each roll into a small, greased ramekin, then spray the top with cooking spray to help them brown.
Bake at 350°F for 20-25 minutes until the top is golden.
While baking, make your protein icing by mixing the ingredients in a small bowl.
Drizzle your icing over the top of your cinnamon rolls and enjoy!
