Ingredients
Dough
- ¾ cup flour
- ½ scoop Vedge Nutrition frosted cinnamon roll protein powder 15g
- 1 tsp baking powder
- 1/3 cup unsweetened applesauce
- 2 tbsp coconut yogurt
Filling
- 2 tsp melted vegan butter
- 1 tbsp coconut sugar
- 1 tsp cinnamon
Protein Glaze
- 1 tbsp Vedge Nutrition frosted cinnamon roll protein powder (10g)
- 2 tbsp coconut yogurt
- 1 tbsp maple syrup
Instructions
- Add all your dough ingredients into a small bowl and mix with a spoon until combined. Do not use your hands, as the dough is quite sticky. It may look like it will not come together, but keep mixing it, and it will!
- Once the dough is incorporated and rolled into a ball, place it on a very well-floured surface. Add lots of flour to the top of the dough.
- Roll out the dough into a large rectangle, adding more flour as needed to prevent sticking.
- Add your melted vegan butter on top and sprinkle on your coconut sugar and cinnamon.
- Slice the dough in half lengthwise, then roll each half.
- Place each roll into a small, greased ramekin, then spray the top with cooking spray to help them brown.
- Bake at 350°F for 20-25 minutes until the top is golden.
- While baking, make your protein icing by mixing the ingredients in a small bowl.
