Easy Vegan Spicy Peanut Noodles {10 minute recipe}

This creamy spicy peanut noodle recipe is the perfect quick and easy dinner for those days you do not want to cook! It is nutty, spicy, salty and has such a rich and filling flavor! It is made in 10 minutes with ingredients that are most likely already in your pantry!

  • Prepare all of your ingredients as this recipes moves quite fast! Grate your ginger and garlic, cut you onions, and have all of the rest of the ingredients ready to go!
  • Boil some water and cook your noodles. Most noodles only take about 3-4 minutes to cook, which is about the same time you need to make the sauce.
  • Heat up the sesame oil in a small pot or pan then sauté your ginger, garlic and green onions for 1-2 minutes until fragrant.
  • Add in the rest of the sauce ingredients and add hot water to thin as needed to make the sauce nice and creamy, but not too thick. I usually add about a little less than a cup of water.
  • Drain your noodles, mix them in with the sauce then serve with some sesame seeds, more green onions and red chilis.
