Easy Vegan Spicy Peanut Noodles {10 minute recipe}
These spicy peanut noodles are rich and creamy with a nutty flavor! They are the perfect lazy dinner to make after a long day of work or if you’re craving some cheeky peanut butter! Having an arsenal of quick and easy recipes to go to is perfect for when you have no clue what to cook! It can help ensure you stay on track with your healthy plant based diet! Most of the ingredients for this recipe can be kept in your panty for easy access so you always have a healthy meal to fall back on! You can even add in some veggies you have on hand or throw in some crispy tofu or vegan chicken for protein!
How to make spicy peanut noodles
These easy spicy peanut noodles are insanely simple to make and done in under 10 minutes! Here’s how to make them!
Prep your ingredients. This recipe moves very fast so make sure to have all of your ingredients ready to go! Grate your ginger and garlic, slice your green onions and have the rest of your ingredients ready to go!
Boil some water and start cooking your noodles. Most noodles only take 3-4 minutes to cook and this sauce we are making takes even less than that so start your noodles first!
Make your sauce in a small pan or pot. Heat up the sesame oil then add in the ginger, garlic and green onions and sauté for 1-2 minutes until fragrant. Then add in the rest of your sauce ingredients and thin with hot water as needed. I usually add about a cup of water. Mix well until the sauce is thick and creamy!
Assemble your noodles. Drain the noodles from the water, mix them in with the sauce and serve with com more green onions, sesame seeds and red chilis!

Add in some veggies! You can sauté some veggies in a separate pot to add into your spicy noodle dish! My favorite easy way to add in some veggies to this dish is by boiling bok choy or broccoli in the water with the noodles. Just strain with the noodles and add to the sauce!
Add some protein! Some crispy tofu would work great in this dish to give it some extra protein! Just make sure to press your tofu using a tofu press so it crisps up and can absorb lots of flavor! You can pan fry or air fry your tofu until crispy with some coconut aminos! Some pan fried mock chicken would also work great in this recipe!
Make sure your noodles are sturdy and hold together! I find that the thin rice noodles or vermicelli noodles always break apart and turn into a mushy mess! I used soba noodles here but my absolute favorite noodles are these Organic Brown Rice Ramen Noodles by Lotus! They are made with millet and brown rice and hold their shape so well! Not to mention they are also packed with whole grains so they have a full, nutty flavor and are very filling!
Prep your ingredients before hand and make the sauce quickly! The peanut butter can dry out and the oils can separate if the sauce is cooked for too long! Make sure to mix everything together quickly then add in the noodles and mix right away!
Make it gluten free! This meal can easily be made gluten free! Just swap the soy sauce for Gluten Free Soy Sauce or Tamari and make sure to use a gluten free noodle! My favorite brown rice and millet noodles from Lotus are a great gluten free option!
Make it nut free by swapping peanut butter for tahini!

Ingredients
For the Noodles
- 400 g Noodles
- 1 tsp Sesame Oil
- 1 inch Grated Ginger
- 1 small Clove Garlic
- 3 stalks Green Onion
- 6 tbsp Natural Peanut Butter
- 1½ tbsp Soy Sauce
- 1 tbsp Rice Wine Vinegar or lime juice
- 2 tsp Maple Syrup
- 1 tbsp Sriracha
- Hot Water to thin about ¾-1 cup
For Topping
- Green Onions
- Red Chilis
- Sesame Seeds
Instructions

- Boil some water and cook your noodles. Most noodles only take about 3-4 minutes to cook, which is about the same time you need to make the sauce.
- Heat up the sesame oil in a small pot or pan then sauté your ginger, garlic and green onions for 1-2 minutes until fragrant.
- Add in the rest of the sauce ingredients and add hot water to thin as needed to make the sauce nice and creamy, but not too thick. I usually add about a little less than a cup of water.
- Drain your noodles, mix them in with the sauce then serve with some sesame seeds, more green onions and red chilis.
