This green olive pasta is for all my olive lovers out there! Imagine your favourite pesto pasta and olive tapenade had a baby… that is what this meal is! Packed with the bold, briny flavours of green olives, and a creamy cashew base, a tangy hint of lemon, fresh herbs, and finished with a rich, cheesy topping of vegan parmesan, this easy green olive pasta recipe is the olive lovers dream! Serve it with your favourite protein, or enjoy it on its own. Pasta night just got an upgrade!

Ingredients
  

  • 1 cup pitted green olives
  • 1 cup cahews
  • 6 tbsp olive brine
  • ½ cup packed fresh parsley
  • 2 tbsp fresh chopped dill leaves
  • ½ cup packed fresh basil leaves
  • 2 garlic cloves
  • 1 tbsp capers
  • Squeeze lemon
  • 6 tbsp olive oil
  • Salt and pepper
  • 500 g Pasta
  • Top with vegan parmesan

Instructions
 

  • Add all ingredients to a blender or food processor and blend until you reach a pesto-like consistency.
  • Season with salt and pepper to taste.
  • Cook your pasta according to package directions.
  • Mix your green olive sauce into your pasta along with some reserved pasta water.
  • Top with vegan parmesan and fresh herbs and enjoy!
