These breakfast cookies are chewy, nutty, sweet and perfect for a breakfast or snack on the go! They are gluten free, refined sugar free, vegan and dairy free and can be made all in one bowl! They will keep you full for hours and are so simple to make!
In a large bowl add in your wet ingredients. Start by mashing the bananas well with the back of a fork then add in your almond butter and maple syrup and mix well to combine.
Add in the rest of your ingredients and mix until evenly coated.
Transfer to a baking dish and separate into cookies. I made 8 large cookies but you can split them up so they are smaller.
Bake at 350f until golden all over, about 25-30 minutes.
