These vegan breakfast cookies are the perfect breakfast or snack on the go. They are chewy, sweet, nutty and will keep you full for hours! They are made with whole foods, are refined sugar free, gluten free, dairy free and vegan! These healthy vegan breakfast cookies are so simple to make and require less than 10 minutes of prep time! Make them at the beginning of the week and you’ll have a healthy snack to munch on all week long!

How to make healthy breakfast cookies

These easy vegan breakfast cookies require less than 10 minutes of prep time and can be made all in one bowl! Here’s how to do it:

Mix the wet ingredients: First, start by mashing up your bananas in a large bowl with the back of a fork. You’ll want 3 large bananas, about three quarters of a cup. Then add in your maple syrup and almond butter and mix well until combined.

Dry Ingredients: After your wet ingredients are incorporated add the dry ingredients on top. Mix again until combined.

Bake: Divide your mixture up, form into cookie shapes and place onto a baking tray. This batch made 8 large cookies, but you can split them up and make smaller ones if you prefer! Bake at 350 degrees fahrenheit until golden all over, about 25 minutes.

These breakfast cookies are so wholesome and healthy! I love these cookies so much because they are made with whole foods and are loaded with healthy fats, fiber and whole grains to keep you full for hours! They are as healthy as a bowl of oatmeal, but easy and convenient to take on the go! They contain no added butter, sugar, or eggs, just a whole bunch of whole plant foods!

Spice it up

Another reason I love these breakfast cookies is that they are totally customizable! Once you have your base of oats, bananas, nut butter and maple syrup you can pretty much put in whatever you want in them! They are super simple to make and pretty hard to mess up! Now that’s my kind of baking!

  • Swap the pumpkin seeds for another seed or some mixed nuts!
  • Mix up the cranberries for anther dried fruit or try some desiccated coconut!
  • If you are not a fan of banana you can swap it for 3/4 of a cup of pumpkin puree! Swap the cinnamon for pumpkin spice to make the cookies fall themed!
  • I have used either agave or maple syrup in this recipe and both work great! You can also omit if you want to make the cookies sugar free!
  • To make these nut free sub the almond butter for a seed butter such as sunflower seed butter.

How to store your vegan oatmeal breakfast cookies

Store your cookies in an airtight container and keep on the counter or in the fridge. They will last for 5-7 days so you can snack on them all week long!

  • Add in the rest of your ingredients and mix until evenly coated.
