These high-protein Snickers bites are made with wholesome, plant-based ingredients to perfectly mimic the flavours of your favourite candy bar minus the added sugars or unhealthy additives. Made with a chewy oat-cashew nougat layer, a creamy peanut butter caramel layer, and a rich chocolate topping, these vegan Snicker bites are a guilt-free choice to satiate your sweet cravings and perfect for tossing into your gym bag for a high-protein post-workout snack.
Start with the nougat layer. Add your oats and cashews to a food processor and blend until the powder is formed. Some small pieces are okay!
Add in the rest of the ingredients and blend until it all comes together.
Add your nougat layer into a lined 8x8 baking tray and press it down with your hands.
Next, make your peanut butter layer by mixing peanut butter, maple syrup, and protein powder in a small bowl.
Add peanut butter caramel on top of your nougat layer and press down with your hands.
Next, melt the chocolate chips in the microwave in 30-second increments, stirring between each increment. Pour the melted chocolate over the peanut butter layer.
Place the baking tray in the fridge for 10 minutes for the chocolate to set, slice, and enjoy!
