Kale and White Bean Salad (Erewhon Copycat)

This kale and white bean salad is my budget-friendly take on an LA-based grocery store that lives up to its hype for healthy snacks. Tender massaged kale, creamy avocado, silky white beans and crunchy hemp hearts are tossed in a naturally sweet lemony dressing. It's nutritious enough as a healthy pick-me-up yet so lighter on the appetite that you can eat a huge bowl without being overwhelmed. Insanely easy to make in under 20 minutes for busy weeknights, this Erewhon-style kale and white bean salad requires no cooking and packs a variety of textures.

Ingredients
  

For The Salad

  • 1 head kale
  • 1 tbsp olive oil
  • 1 can white beans
  • 1 avocado
  • cup hemp Hearts
  • cup pumpkin Seeds
  • cup sunflower seeds

Nooch Dressing

Instructions
 

  • Roughly chop your kale and add to a large bowl with a drizzle of olive oil.
  • Massage the kale with your hands for about 5 minutes.
  • Add your white beans, avocado, hemp seeds, pumpkin seeds, and sunflower seeds to the top.
  • Make your dressing by blending all ingredients.
  • Pour on the dressing, toss and enjoy!
