How to Make Erewhon Copycat Kale and White Bean Salad
Prepare the Kale
Roughly chop your kale and add it to a large bowl with a drizzle of olive oil. Massage the kale with your hands for 5 minutes. This step softens the kale and enhances its texture and flavour.

Assemble the Salad
Add the white beans, avocado, hemp hearts, pumpkin seeds, and sunflower seeds on top of the massaged kale.

Make the Nooch Dressing
To make the nooch dressing, blend nutritional yeast (nooch), apple cider vinegar, garlic, soy sauce, maple syrup, water, olive oil, salt, and pepper until smooth and well combined.

Toss and Serve
Pour the dressing over the salad. Toss everything together until evenly coated. Serve immediately and enjoy!

Ingredients
For The Salad
- 1 head kale
- 1 tbsp olive oil
- 1 can white beans
- 1 avocado
- ⅓ cup hemp Hearts
- ⅓ cup pumpkin Seeds
- ⅓ cup sunflower seeds
Nooch Dressing
- ¼ cup nooch
- 2.5 tbsp apple cider vinegar
- 1 garlic
- 2 tbsp soy sauce
- 1 tsp maple syrup
- 2 tbsp water
- ⅓ cup olive oil
- salt & pepper to taste
Instructions
- Roughly chop your kale and add to a large bowl with a drizzle of olive oil.
- Massage the kale with your hands for about 5 minutes.
- Add your white beans, avocado, hemp seeds, pumpkin seeds, and sunflower seeds to the top.
- Make your dressing by blending all ingredients.
- Pour on the dressing, toss and enjoy!
