Lentil Walnut Taco Meat {easy 10 minute recipe}
This lentil walnut taco meat is a perfect quick and easy weeknight dinner. It is packed with Mexican flavor, seasoned to perfection and has a satisfying meaty texture! ½ Large Onion diced 4-5 cloves Garlic 200 g Mushrooms finely diced 2 400g cans Lentils 1 cup Chopped Walnuts ⅓ cup Tomato Sauce 1½ tbsp Soy Sauce 4 tbsp Taco Seasoning see below for homemade version Handfull of Cilantro Juice of ½ a lime Homemade Taco Seasoning 2 tbsp Nutritional Yeast 2 tsp Smoked Paprika 2 tsp Onion Powder 2 tsp Chili Powder 2 tsp Cumin ½ tsp Chili Flakes
Sauté your diced onions for a few minutes until translucent.
Add in your garlic and mushrooms and cook for a further few minutes.
Next add in the rest of your ingredients, except for the lime juice and cilantro. Mix until combined and cook until the mixture is warmed through.
Once heated through finish with a squeeze of lime and handful of cilantro and serve!
