This lentil walnut taco meat is the perfect weeknight main! It is made with wholesome ingredients and takes less than 10 minutes to make! This taco meat is salty, seasoned with Mexican flavor, and has a meaty texture perfect for tacos, burritos and burrito bowls! This is sure to be one of your new go to quick and easy dinners!

What ingredients do I need for my lentil walnut taco meat

  • Onion
  • Garlic
  • Cooked Lentils
  • Crushed Walnuts
  • Mushrooms
  • Tomato Sauce
  • Soy Sauce
  • Taco Seasoning
  • Lime
  • Cilantro

How to make lentil walnut taco meat

Sautee your onion until translucent, about 5 minutes. Then add in your garlic and mushrooms and cook for a further few minutes.

Add in the rest of the ingredients, except for the cilantro and lime and mix well. Cook until the mixture is heated through and it is well combined.

Season your lentil taco meat to taste with salt and pepper then finish it off with a handful of chopped cilantro and the juice of half a lime.

Serve and enjoy!

How to eat your lentil walnut taco meat

Use your taco meat for lettuce wraps! This is a great lower carb option that still tastes amazing! Don’t forget the guac!

In burritos, burrito bowls or tacos. It is the perfect whole food plant based meat option!

Alongside a tofu scramble. This is a great way to get in a serving of legumes right at the beginning of your day!

Some tips from Steph

Make it soy free by omitting the soy sauce. You can use 3/4 tsp salt or use coconut aminos instead!

Use dry lentils. If you want to use dry lentils instead of pre-cooked canned lentils you can add 1 cup of dry lentils to your pot with 3 cups of veggie broth. Let that simmer for 30-40 minutes until all of the water has been absorbed.

Don’t like mushrooms? You can omit them if you’d like however they do hide quite well in this taco meat! My boyfriend hates mushrooms and he didn’t even notice they were in there! If you includue them make sure to chop them into very small pieces so there are no large chunks!

Make it nut free! Sub the walnuts for crushed sunflower seeds for a nut free version!

Make it gluten free! This recipe is all gluten free except for the soy sauce. Sub the soy sauce for a gluten free tamari or 3/4 tsp of salt.

Use a store bought taco seasoning if you don’t want to make a mix of your own spices. Old El Paso works great, however I like to use the reduced sodium packets as the normal ones are very high in sodium!

Don’t have limes? You can use lemon juice instead!

Ingredients
  

  • ½ Large Onion diced
  • 4-5 cloves Garlic
  • 200 g Mushrooms finely diced
  • 2 400g cans Lentils
  • 1 cup Chopped Walnuts
  • cup Tomato Sauce
  • tbsp Soy Sauce
  • 4 tbsp Taco Seasoning see below for homemade version
  • Handfull of Cilantro
  • Juice of ½ a lime

Homemade Taco Seasoning

  • 2 tbsp Nutritional Yeast
  • 2 tsp Smoked Paprika
  • 2 tsp Onion Powder
  • 2 tsp Chili Powder
  • 2 tsp Cumin
  • ½ tsp Chili Flakes

Instructions
 

  • Sauté your diced onions for a few minutes until translucent.
  • Add in your garlic and mushrooms and cook for a further few minutes.
  • Next add in the rest of your ingredients, except for the lime juice and cilantro. Mix until combined and cook until the mixture is warmed through.
  • Once heated through finish with a squeeze of lime and handful of cilantro and serve!
