Mason Jar Burrito Bowl

Ingredients
  

Cilantro Lime Rice

  • 1 cup uncooked brown rice
  • 1 lime juice
  • 1/2 cup fresh chopped cilantro

TVP ‘Beef’

  • 1 cup textured vegetable protein (TVP)
  • 1.5 cups water
  • 2 tsp chili powder
  • 1.5 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp oregano
  • 1/4 tsp chili flakes
  • 2 tbsp nutritional yeast
  • 1/4 tsp salt

Chipotle Dressing

  • 3/4 cup oat yogurt
  • 2-3 tbsp chipotle peppers in adobe sauce
  • 1 garlic clove small
  • 1 lime juice
  • 1 tsp maple syrup
  • 1/8 tsp cumin
  • salt to taste

For Assembling the Salad Jars

  • 3/4 cup corn
  • 3 tomatoes small
  • 6 cups romaine lettuce shredded
  • 3/4 cup black beans
  • 1 avocado

Instructions
 

  • First, cook your brown rice according to the package directions. When it is finished cooking, mix in your lime juice and chopped cilantro.
  • Next, make your TVP "Beef." Add your TVP, spices, and water to a bowl and combine. Let that sit for 10 minutes for your TVP to rehydrate.
  • Add rehydrated TVP to a pan over medium heat and cook until all the water is absorbed.
  • Make your Chipotle dressing in a small blender. Add salt as needed to taste, although the chipotle peppers in adobo sauce are quite salty, so you may not need to add any extra!
  • Chop up the rest of your veggies.
  • Assemble your salad jars with your dressing at the bottom, followed by your cilantro lime rice, TVP ‘beef”, corn, tomato, avocado, black beans, and lastly, your lettuce.
  • Keep your wilting lettuce at the top of the salad jar so it stays crisp and fresh!

Notes

These are the measurements for 3 salad jars. You will need 3 wide-mouth mason jars or containers to prep these salads!
